Baby beet greens for dinner

Picked these from our roof top garden.

The tender young shoots can be treated like salad greens.  They do have a slight bitterness but nothing some sweetness in the vinaigrette can’t balance.

I also like to give these a quick stir fry with garlic and tamarind.  Super hot pan, dash of sesame oil, the beet greens, the garlic, and the tamarind sauce.  The whole process should take about 5 minutes.
